The Greatest Fajita Marinade
By Karnivore Kayla
I would be lying if I said “I LOVE Mexican food”. I really like carne asada and salsa and corn chips, but I could live without it. I’ve just accepted that I’m not one of those people who lets taquerias and burritos run my life. Eggs. Coffee. Dark chocolate. Stance socks. Green Day. The Lion King. Feejays. Now we’re talkin’ about the things I love whole heartedly. I also LOVE cooking (yo, if you didn’t know, I have an ‘Instant-gram’ page dedicated to my sacred meals @calikooks). Cooking is a total win-win. You can choose exactly what you want to eat, then present it to your liking! It’s freakin’ amazing. And you know what’s even more amazing? Besides crockpots which bascially cook for you (I call mine Lil Chef)…marinades. Your raw whatever baths for hours on end in a flavorful concoction of seasonings, and zests, and sauces that were creatively crossbred by your past-self for a meal that your future-self will indefinitely enjoy. Marinades have the power to bring an explosion of flavor to any meats, which makes steaks and drumsticks unbelievably delectable and chicken breasts actually edible! Hell to the yes. Sign me up for all the marinades!
Okay now for the actual recipe:
*This is obviously for fajitias, so serve with your favorite salsa, grilled veggies, guacamole, plantains, cauliflower rice…whatever tickles your ethnic fancy!
6 Cloves garlic, smashed
1/4 cup Coconut aminos
1/4 cup Olive oil
1 tsp Chili powder
1.5 tsp Cumin
1/4 cup Cilantro, chopped
2 Limes, juiced/zested
Step 1 of 3: Mix all ingredients together.
Step 2 of 3: Mix with meat of choice in a dish or ziploc bag.
Step 3 of 3: Allow to marinade for at least an hour or just like, marinade it all day long.
