This recipe was a staple of mine back in the good ol’ days when I was a young college lad. I forgot all about it as I was gifted with more crap to keep in my kitchen and cook with. One could say that I became “too good” for this recipe. In reality, this recipe is super bomb, very fast, and makes for great leftovers. Never underestimate the power of spices. Now that I am back in school, meal prep is a big task, and even more important now being on Day ??? of Whole30. What is this….day 10? 11? I have no idea. What’s the point of keeping track anyways….it’s not like day 31 is going to be any different than day 30. I enjoy this recipe over a bed of mixed greens and/or mashed sweet potato.
Ingredients:
1.5lbs Ground Beef
1 Tablespoon oregano
1/2 Tablespoon turmeric
1/2 Tablespoon cumin
Salt and pepper, to taste
3 Tablespoons olive oil
1 tsp. Coriander seed
1 Yellow onion, diced
1 Red bell pepper, diced
1 Orange bell pepper, diced
3 Cloves garlic, minced
1 Bundle of broccolini
A bunch of pimento olives. I really like olives so I can’t tell you to put 2 cups in this recipe. But that’s what I do. Sliced.
Recipe:
- Heat up a skillet over medium heat and brown ground beef. Add spices and salt and pepper.
- Once browned, add olive oil, onion, garlic, and peppers and cook down until onions are translucent.
- Add broccolini and olives.
- Consume.
