Thai Tuna Salad

I retired from tuna after the second grade when my dad used to shove 3 pounds of tuna mixed with best foods mayo in between two slices of white bread. No one sat next to me at lunch and I would even go as far as bartering other things in my lunch for things like Cheez-It’s, Jell-O, Gushers, and other chemical packed snacks because, well, anything but tuna!!!! But as I’ve gotten older and my palate has matured and I no longer crave things like eating powdered sugar straight out of the box or hot pockets, I have grown to love tuna again and all its protein-packed goodness! This recipe is very easy and quick and full of flavor.

Ingredients:

1 5oz. canned wild tuna

1 Tablespoon fish sauce (I like Red Boat)

2 Tablespoons lime juice

1 Shallot

1 Green onion, sliced

1” minced ginger

1 Tablespoon sliced almonds

1 Serrano pepper

1 Tablespoon chopped cilantro

Step 1: Mix everything together.

Step 2: Eat.
